I’m syncing the quantity field from the system to a custom field called “Quantity DH”, but for some reason, the regular quantity on SFDC is also getting populated.
What is the reason for it?
How is it being populated/ synced?

Quantity field - SFDC (Pricing Formula)
This is expected behavior in a standard DealHub–Salesforce integration.
DealHub always syncs line-item quantity to Salesforce’s standard Quantity field as part of its native object mapping. This happens independently of any custom field mappings you define. When you map the DealHub quantity to a custom field like “Quantity DH”, that mapping runs in parallel — it does not replace or override the default sync.
In short, there are two sync paths:

Native DealHub sync → standard Quantity

Custom field mapping → “Quantity DH”
